お菓子作りの楽しさの一つに素材探しがあります。同じレシピでも、使う素材によって全く違った味になるから不思議です。私たちはまず近隣の有機栽培農家さん探しからスタートしました。農薬全盛の時代にあっても、数は少ないですが無農薬や無化学肥料に拘っている農家さんは存在します。実際にお会いして、畑に案内され、採れたての人参や生姜、柑橘類をさっと洗って頂くと「え？」という驚きの感覚に包まれます。本当に甘くて美味しいのです。

Insistence on organic.

To begin, we started from searching for ingredients at a local organic farm. Although most farms use pesticides and chemicals, we really respect the few farms that go through the trouble to use little to no chemicals on their crops. 

We visited the farms, met the hardworking farmers, toured the grounds, and got to try their fresh produce on the spot! We were so shocked by the difference in taste of the fresh organic ingredients! It was so naturally sweet, fresh and delicious.

お菓子をお客様にお届けする場合、味の均一性や消費期限への対応は避けては通れない要素です。しかし、どのパッケージを食べても同じ味や食感がしたり、長めの消費期限を確保するには、乳化剤や保存料、酸化防止剤、着色料、香料、さらには栄養剤などが必要になってきます。それって本当に必要ですか？多少味にばらつきがあったり、「お早や目にお召し上がりください」でも、きっと許してくれますよね。

When making baked goods intended to be shipped to customers, the taste among various batches should be consistent and one must consider how long the baked goods will stay good for.

However, if the products are all made to be exactly the same and are made to have a long shelf life, various chemicals, preservatives, emulsifiers, antioxidants, artificial coloring and flavoring as well as artificial nutrients must be used. We asked ourselves; “Are those all really necessary? No!” Therefore, please forgive us if our baked goods may have slight variations in taste and should be consumed as soon as possible after purchasing.
